  2. Rub the brisket all over with salt and pepper.

  3. Smoke at 225°F (107°C) for 10 to 12 hours until internal temperature reaches about 200°F (93°C).

  4. Wrap in butcher paper partway if the bark is set.

  5. Rest 1 hour, then slice against the grain.
